Oatmeal Pancakes

These are so good!
 I love the texture of these and they are so much more healthier than ordinary pancakes with the addition of oats.  Good with or without syrup~ and now that I am thinking about it~ they would be good with some pecans or walnuts thrown in to make them crunchy.

2 cups quick cooking oatmeal
1/2 cup sugar
1 1/2 cup milk
2 eggs
dash of salt
1 tsp baking powder
1/4 tsp cinnamon

Mix dry ingredients and wet in seperate bowls.

 I received this recipe from a Mom who sent her son away to college years ago, 
but she never specified the amount of flour to use. 
I just add flour until it is the right consistency for pancakes.

Cook in skillet.  These will not 'bubble' as ordinary pancakes do since they are so dense.  Just make sure they're cooked in the middle.  Also, these get pretty brown but they still taste wonderful!
