Easy Chicken Stuffing Casserole and Blog Remodel

When we first were married almost 24 years ago I had an official recipe for this since I was learning how to cook and knew absolutely nothing! (Those were the days!)  If I remember correctly, I pulled it out of a Reader's Digest (I read them cover to cover!) from an advertisement for soup or stuffing.   I had cooked up some deboned chicken that I made in the crockpot and it popped into my mind.   

Easy Peasy!  (I say that alot, don't I?) 

Deboned Chicken (I bought leg quarters on sale super cheap and used that recently)
Cream of Mushroom or Chicken Soup 
One box of Stuffing made according to box instructions but not baked.
Spray 13 by 9 pan with non stick spray and fill with deboned chicken 
Put Cream Soup in a bowl and add a can of milk and whisk well.  Pour over Chicken. 
Top with Stuffing and bake 350 till hot and bubbly.  

I wasn't liking the shabby chic theme I previously chose for my blog layout since I didn't think it jived well with the theme of my blog so I switched it back over to Red... again!!!  I also made a new watermark for my blog that I am absolutely loving!  Isn't it adorable?

  1. Found your blog through a link party and really enjoying. I am glad you changed to the red polkadot background- its cute! And matches your sweetheart kitchen which was what I first enjoyed reading on your blog...
    : ) I do however hope you will consider changing your font- sort of hard to read and distracting- I would stay on your blog reading more - archives and such but the font is just not welcoming somehow. Please do not take offense- just trying to offer some help that you may not see as objectively.

  3. LOL I just commented about your new background before I even saw this post. I love it :) Changes the whole feel. Great choice! And I will be making that chicken casserole soon! Cute new watermark, too. I noticed that on the pic of your new mugs ;)

    1. It was originally red and white and then I changed to shabby chic. I like the red much better! I might change reds but I'll stick with that for now!

  5. That is one of my family's favorite meals. The only thing I do differently is that I put my stuffing on the bottom of the pan, top with chicken and then pour the soup mixture on top. That way my stuffing stays really moist. My family goes ape for this meal. Such comfort food.
