Garbanzo Bean Salad

I threw this together yesterday, put it in mason jars, and am letting it sit in the refrigerator for flavor!  Oh how I love Garbanzo Beans and pickled vegetables! 
Very easy ingredients with no measurements to your liking~ 
1/2 package of garbanzo beans cooked till tender 
one can of sliced olives, drained 
Cilantro leaves chopped up
Cherry tomatoes (they are in there~ they must be shy!)
chopped onion 
Toss with your favorite Italian Dressing or Olive Oil Dressing
I was going to add some corn but forgot!  There's always next time!

If you try this (even a variation) I'd love to know how you like it!

  7. I use chickpeas just about every day either in soups or salads. They are even good just heated up then topped with fresh tomatoes, chopped parsley, onions and a drizzle of very good olive oil. Yum! Best wishes, Tammy

  8. That looks delicious and being vegetarian I will have to try making it. Love chickpeas and any kind of beans - adding good olive oil is the key I'm sure.

  9. I love, love garbanzo beans and whenever I'm in our Natural Foods Store, I buy a little to-go dish of them. This looks like a great recipe, though I would have to leave out the cilantro (I'm one of those people who don't like it!) Thanks so much for sharing it with us and joining in this week.

    So easy and wonderful to have on idea for an easy meal.
    Cheesey corn chips with scoops of this would be yummy!!
