Cherry Fluff

This is so yummy on a hot summer day, for a picnic or a potluck or any time you fancy something chilled and sweet.  It's so easy to throw together and I like to make it the day before so it has time to chill and firm up.  
I hit Aldi's today and found everything that I needed in generic form~ and it didn't effect the taste in any way.  

One can cherry pie filling 
(I've always wanted to use another type of filling but have never taken the plunge yet!) 
One can sweetened condensed milk 
16 ounces Cool Whip 
16 ounces crushed pineapple~  do not drain
1 cup chopped nuts (optional) 
1 cup mini marshmellows
In a very large bowl combine pie filling, crushed pineapple and sweetened condensed milk.  
Toss in mini marshmellows and nuts.
Whip all together until incorporated.
Fold in Cool Whip.  
Chill overnight or for a few hours before serving.

Easy Tips for Perfect Pie Crust~

I love pie crust and making one that looks nice can sometimes be difficult~  If the weather is hot and humid it makes the dough difficult to work with.   
Here are a few tips that I use to make a great looking pie crust.

When measuring out shortening I line my measuring cup with plastic wrap, making sure the wrap touches the entire bottom of the cup.  I scoop my shortening in the cup and there is no greasy mess to clean up.

Now, on to the rolling dough~  
I place two pieces of saran wrap that is about 3-4 inches larger than my pie plate all around.  I overlap the saran wrap so it becomes one sheet.

Plop your pie crust in the middle and flatten it a bit.

Place two more joined pieces of plastic wrap over the top of your pie crust and roll your dough out between the two sheets of plastic wrap.

Make sure it's larger than your pie plate.

Remove the top layer of plastic wrap and place pie crust in pie plate, making sure that the crust hits the bottom of pie plate in all areas.  (this next picture stinks too!)

Remove plastic wrap and trim off edges.

Crimp your edges between two pinched fingers on one hand and your index finger and~  Voila!

Homemade Apple Fritters

I found the original recipe over at Greek Food and Greek Life and tweeked it to my own liking.  
Quick and Easy with minimal ingredients~  

In large bowl mix together~ 
1 cup of flour~  heaping 
1/3 cup sugar 
1 tsp baking powder 
dash of salt 
1 tsp cinnamon

In seperate bowl combine wet ingredients~   
1/2 tsp vanilla 
1 Tbsp butter melted 
1 egg 
1/3 cup milk (plus additional if too dry) 
1 chopped apple 

Add dry ingredients to wet ingredients adding milk if neccesary till just combined.  

Drop by spoonfulls into hot oil and fry until golden brown.  Adjust the oil temperature to make sure fritters are being cooked through so they are not raw in the center.  

Mix together a bit of cinnamon and sugar and toss fritters in cinnamon sugar.

Pound Cake

We've been traveling all this week and just arrived back home~  and how good it is to be sleeping in my own bed!  Yay!  

I also wanted to thank you for taking the time to being a follower on blogger or google friend connect.  I don't use those options and prefer to follow by an RSS feed or I would gladly follow you back.  But I wanted to take the time to say thank you! 

What a great pound cake recipe I recently received from my friend Connie!  I added the zest of 2 lemons into the batter and used the juice in the glaze for some zing.  If you're a pound cake purist then the glaze isn't neccesary.  ;)

Grease Bundt pan and set aside. Preheat oven to 300 degrees.

Ingredients~
3 sticks butter (room temperature)
3 cups sugar
6 eggs
1 tsp vanilla extract
1/4 cup Crisco butter flavor shortening (or regular is okay)
1 cup evaporated milk
1 tsp lemon or vanilla extract
3 cups all purpose flour (I sifted mine)
1 tsp of salt
(zest of two lemons)

Cream together butter and shortening until light and fluffy.  Add sugar and continue to beat.  Add half of milk and eggs one at a time beating after each.  Add remaining milk and extract.  Add flour and salt and mix together.  Bake one hour at 350 degrees.  Insert toothpick

Glaze:
2 cups powdered sugar 
Juice of two lemons 
vanilla extract

With whisk mix in extract into powdered sugar and add enough lemon juice till the glaze is the right consistency.

Homemade Bunuelos/Sopaipilas

I finally figured out that I can add a 'blogger' follower gadget instead of a Google Plus followers gadget to my sidebar at right so if you'd like to follow me that option is available!  

My blog is still under construction and the sidebar still needs a bit of help but I'm liking what I see so far.  Maybe another week or so before things are (hopefully) perfect!

And now on to the main reason for posting!  

Bunuelos/Sopaipilas can be made with store bought flour tortillas or by rolling out your homemade flour tortilla dough and frying it in oil.  The 'real' homemade ones are SOOOOOO much better but the store bought version are pretty a~ok too! 

Just fry your rolled out dough or storebought tortillas in some oil, let them drain, and then sprinkle some cinnamon sugar on the top of them.  They are so yummy!  
Great with coffee or on the side of a dish of ice cream.  
Some people call them bunuelos and other people call them Sopaipilas.   Fights might ensue about which is the right term but I just say 'either' and call them very, very good!
